Frozen Coconut Cookie Cream Dessert Recipe

STEP ONE : 5 MINUTE PREP (Prepared 1 Day in advance)


VANILLA ICE CREAM CUBES

Supplies

• 1 Can full fat coconut milk

• 1/4 TSP Vanilla Stevia (or vanilla bean powder)

• Ice Cube Tray (Silicone trays are perfect for these)


1. Mix coconut milk and vanilla until smooth

2. Pour into ice cube tray, cover, and freeze overnight



STEP TWO : 15 MINUTE ICE CREAM


• 1 Tray vanilla ice cream cubes

• 1 Can full fat coconut milk solid portion (save the liquid portion of the coconut milk for later)

• 1 TBLS Monk fruit

• 2 Scoops collagen

• 1/4 Cup colostrum

• 1-2 TBLS MCT Oil


1. Add all ingredients into food processor or blender (leaving ice cream cubes out of the freezer 15 minutes prior to mixing is sometimes necessary). Now is where the liquid portion of the coconut milk comes in. Add a small amount of the liquid if needed during mixing to alter consistency to that of ice cream.

2. Mix, pour in bowls, ENJOY!
